Fast Fried Fresh Sardines

1 kg of fresh sardines
1 cup vegetable oil 


  • Clean and wash sardines in cold water. Sprinkle with salt and put in colander to get rid of extra liquid.
  • Heat oil in a heavy pan until hot. 
  • Roll sardines in all purpose flour and fry in vegetable oil until brown and crispy. 
  • Sprinkle with kosher salt and dry on paper towel to get rid of excess oil. 
  • Serve hot with fresh bread and bean salad or any other salad of your choice. 
          Makes 4 to 5 servings.

Note: Fresh anchovies could also be prepared that way. This type of food is very popular for lunch, called marenda in coastal and continental part of Croatia.
