Warm New Potato Salad with Pancetta Dressing

Ingredients for the Salad:
1 kg cooked new potatoes, sliced
2 green onions, thinly sliced
1 mixture of Pancetta Dressing

Ingredients for the Pancetta Dressing:
8 slices Pancetta or some other smoked meaty bacon
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
salt and freshly ground black pepper to taste


  • Cook new potatoes. 
  • Thinly slice green onions and set aside.
  • In the heavy pan cook the pancetta until crisp, but not burned. Drain off excess fat and break pancetta into smaller pieces, but leave pancetta in the pan. 
  • Add olive oil, vinegar, season to taste and just bring to boil. Remove from heat and set aside.
  • Peel and slice new potatoes and put them in serving bowl. Pour warm dressing over potatoes, sprinkle with thinly sliced green onions and toss to cover. 
  • Serve with meat dishes, with garlic bread or just with fresh bread for delicious lunch.
