Ingredients:
1 cup unsalted butter or margarine
1/2 cup sugar
pinch salt
1 1/2 teaspoons mint extract
2 tablespoons crushed dried mint leaves
2 cups flour
extra sugar for coating
Makes about 3 dozen cookies. |
Preparation:

Mix butter and sugar until smooth. Add mint extract, mint
leaves, flour and salt. Mix thoroughly.

Chill dough for at least 1/2 hour.

When ready to bake, preheat oven to 350 F. Form the dough
into 1 inch balls and roll them in sugar. Press ball with your thumb.

Line cookie sheets with foil or parchment paper. Place cookies
on cookie sheets and bake 12 to 15 minutes.

Cool on racks.
