Quick Oat Cookies

Ingredients:

1/2 lb unsalted butter or margarine, melted
2 1/2 cups quick oats
2  cups light brown sugar
4 tablespoons flour
Pinch of salt
1 egg
1 teaspoon vanilla


Preparation:

  • Dissolve sugar in butter and let cool. Gradually add dry ingredients, then slightly beaten egg and vanilla. 
  • Preheat the oven to 375º F (190º C). 
  • Drop mixture by teaspoonfuls on a foil or parchment paper lined cookie sheet. 
  • Bake about 8 to 10 minutes or until light brown. 
  • Cool on racks.


Makes about 3 dozen cookies.
