| 1 large avocado,
pitted
1/2 cup cooked spinach,
chopped
1/2 cup cottage
cheese, mashed
1 garlic
clove, minced
2 tsp. lemon
juice
2 green
onions, finely chopped
salt and ground black
pepper to taste
Makes 3-4 servings |

Scoop the flesh out of the avocado
and blend it thoroughly with the spinach in a food processor.

Add the mashed cottage cheese,
garlic, lemon juice and blend again.

Pour the mixture into a medium
size serving bowl and stir in the chopped green onions.
Season to taste with salt
and ground black pepper.
Chill before serving.
