Avocado & Cottage Cheese Dip

Ingredients:

1 large avocado, pitted

1/2 cup cooked spinach, chopped

1/2 cup cottage cheese, mashed

1 garlic clove, minced

2 teaspoons lemon juice

2 green onions, finely chopped

Salt and ground black pepper to taste


Makes 3-4 servings.


Preparation:
  • Scoop the flesh out of the avocado and blend it thoroughly with the spinach in a food processor.
  • Add the mashed cottage cheese, garlic, lemon juice and blend again.
  • Pour the mixture into a medium size serving bowl and stir in the chopped green onions.
  • Season to taste with salt and ground black pepper.
  • Chill before serving.

Ripe avocado will keep in the refrigerator for two to three days. In general, you should serve avocados as soon as possible after cutting them, because once avocado becomes exposed to the air, it will immediately start to turn brown. Sprinkling citrus juice or vinegar over it will retard this process.
Fresh avocados do not freeze well. For best freezing results, mash, puree or make guacamole with your ripe fruits.

     * Select ripe, softened fruit, then peel and remove the seed.
    * In food processor or with blender puree, mash or make guacamole.
    * Pack into small freezer containers. Squeeze enough lemon or lime juice to cover the top to prevent browning.
    * Seal container and use within a two months.
