Avocado Soup

Ingredients:

2 cups clear chicken broth

2 medium ripe avocados

1 thin slice onion

3 tsp fresh lime juice

1½ cup cold milk

Salt to taste

Lime vedges



Preparation:
  • In a blender, combine chicken broth, avocados, onion slice, lime juice, and salt. 
  • Blend until mixture is smooth and pour into a bowl. 
  • Stir in milk, cover and chill thoroughly. 
  • Serve with lime wedges.
Makes 4 to 6 servings.
