Emu Meat Loaf

Ingredients:

1-1/2 lb ground emu meat
3/4 cup fine bread crumbs
3/4 cup milk
1 large egg, slightly beaten
1/3 cup finely chopped onion
1/4 teaspoon ground sage
1 teaspoon poultry seasoning
1/2 teaspoon garlic, minced
Salt and ground white pepper to taste

Garnish with green salad, green pepper and fresh onion rings.

Preparation:

  • In a small bowl soak bread crumbs in milk. 
  • In large bowl mix emu meat, onion, sage, garlic and all seasonings. 
  • Add beaten egg to bread crumbs, mix well and add to the emu meat. 
  • Mix to combine, taste and adjust seasonings. 
  • Preheat oven to 350 F (180 C). 
  • Grease 8-1/2 x 4-1/2 x 2-1/2 - inch loaf pan. 
  • Lightly pack meat mixture into loaf pan and bake for about 50 to 55 minutes. 
  • Garnish and serve. 
  • Makes 8 servings.

Emu meat is great tasting, very lean (about 95 to 97 % fat free) red meat. It is very similar to No. 1 grade lean beef in both taste and appearance. It is higher in iron, protein, Vitamins A, C, and B12 than beef and lower in cholesterol than lean chicken.

Emu is mostly raised naturally, so in most cases the meat contains no chemical additives.
