Ingredients:
1-1/2 lb ground emu meat
3/4 cup fine bread crumbs
3/4 cup milk
1 large egg, slightly beaten
1/3 cup finely chopped onion
1/4 teaspoon ground sage
1 teaspoon poultry seasoning
1/2 teaspoon garlic, minced
salt and ground white pepper to taste
Garnish with green salad, green pepper and
fresh onion rings. |
Preparation:

In a small bowl soak bread crumbs in milk.

In large bowl mix emu meat, onion, sage, garlic and all seasonings.

Add beaten egg to bread crumbs, mix well and add to the emu meat.

Mix to combine, taste and adjust seasonings.

Preheat oven to 350 F (180 C).

Grease 8-1/2 x 4-1/2 x 2-1/2 - inch loaf pan.

Lightly pack meat mixture into loaf pan and bake for about 50 to 55
minutes.

Garnish and serve.
