Twin Meat Loaves

Ingredients:

1 lb ground beef
1 lb ground pork
1/4 cup finely chopped onion
1 teaspoon garlic, minced
2 tablespoons finely chopped celery
1 tablespoons finely chopped parsley
1 teaspoon poultry seasonings
1 teaspoon paprika
salt, chili  and black pepper to taste
5 slices soft bread, cubed
3/4 cup milk
2 medium eggs, slightly beaten
2/3 cup fine bread crumbs
 

NOTE: For hot version of meat loafs spread chili sauce over each loaf and bake.

Makes 8 to 10 servings.



Preparation:
  • Soak cubed bread in milk. Mix beef and pork. Add chopped onion, garlic, parsley, celery and seasoning.
  • Add eggs to soaked bread cubes and mix until smooth.
  • Thoroughly mix meat mixture, add bread mixture and combine. 
  • Preheat oven to 350 F (180 C). 
  • Add salt, chili and pepper to mixture and mix well. Taste and adjust seasonings. 
  • Form 2 meat loaves. Roll loaves in bread crumbs. 
  • Bake in greased baking pan for about 1 hour. 
  • Serve hot or cold.
