Italian Vinaigrette

Ingredients:

1/2 cup extra virgin olive oil
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon granulated sugar
1/3 cup balsamic vinegar, or to taste


Preparation:
  • Place all of the vinaigrette ingredients in a glass jar with a well fitting lid and shake them well.
  • Set the vinaigrette aside.
NOTE: Vary the ingredients in the vinaigrette to suit your palate. Add any chopped fresh herbs, Dijon mustard or fresh lime juice to taste.

Commercial vinaigrette preparations are often emulsified with lecithin or similar additives, while fresh preparations can be made with egg yolk or more weakly emulsified with mustard or left as mixtures that will separate. This is the most common use of the word.

In the English-speaking word, vinaigrettes are also widely known as French dressing.
