Eggs & Watercress Finger Sandwiches
 

Ingredients:

8 hard boiled eggs
1/3 cup mayonnaise
1 tablespoon Dijon mustard
1/3 teaspoon celery seeds
2 tablespoons chopped fresh watercress
4-5 tablespoons butter, softened
8 slices fresh bread of your choice, crust removed
fresh watercress sprigs for garnish
 
 


Preparation:
  • In a medium size bowl combine chopped eggs, mayonnaise, mustard, celery seeds and watercress. Mix well and set aside. 
  • Lightly butter bread. 
  • Spread half the bread slices with prepared mixture, garnish with watercress sprigs. Top with remaining bread slices, buttered side down. Press gently to seal. 
  • Wrap and refrigerate at least 1 hour. 
  • Cut sandwiches crosswise into 1" slices.
