Ingredients:
8 hard boiled eggs
1/3 cup mayonnaise
1 tablespoon Dijon mustard
1/3 teaspoon celery seeds
2 tablespoons chopped fresh watercress
4-5 tablespoons butter, softened
8 slices fresh bread of your choice, crust
removed
fresh watercress sprigs for garnish

Preparation:

In a medium size bowl combine chopped eggs, mayonnaise, mustard, celery
seeds and watercress. Mix well and set aside.

Lightly butter bread.

Spread half the bread slices with prepared mixture, garnish with watercress
sprigs. Top with remaining bread slices, buttered side down. Press gently
to seal.

Wrap and refrigerate at least 1 hour.

Cut sandwiches crosswise into 1" slices.
