French Toast Sandwiches

Ingredients: 

4 large eggs
1 cup buttermilk
1/2 teaspoon ground cinnamon
Pinch of salt
8 slices day old sandwich bread
4 to 5 tablespoons cream cheese
Filling of your choice*
4 tablespoons unsalted butter
Confectioners' sugar

* Jam or jelly; fresh fruit, sliced and sugared to taste (strawberries, blueberries, and apricots are three favorites); a mixture of dates and chopped walnuts; 


Preparation:
  • In a medium size bowl, whisk the eggs, milk, cinnamon, and salt together. 
  • Spread 4 slices of bread with cream cheese. Top with the filling of your choice, and cover with the remaining bread. 
  • Soak both sides of the sandwich in the egg batter for 1 to 2 minutes per side. 
  • Melt 2 tablespoons butter in a heavy skillet and sauté 2 sandwiches at a time over medium heat until golden brown, turning once. 
  • Repeat with the remaining sandwiches. 
  • Cut on the diagonal and serve warm, sprinkled with confectioners' sugar.

TIP:
You can prepare delicious french toast sandwiches with cinnamon raisin bread. If you use cinnamon raisin bread omit the cinnamon from the egg batter.


Makes 4 sandwiches.
