Artichoke Soup

Ingredients:

1 pounds artichokes
1 small onion
2 cups milk
2 cups chicken or mixed vegetable stock
1 tablespoon white vinegar
1 tablespoon lemon juice
6 white peppercorns
Salt to taste




Preparation:
  • Peel the artichokes and lay them in vinegar and water for an hour; this will make them a good colour. Mix up half of the milk with the stock, add onions, and peppercorns and boil the artichokes in this for an hour.
  • Puree cooked artichokes and onion with a food mill or rub through a hair sieve with a wooden spoon. Stir in the rest of the milk and some salt, pour back into the saucepan and stir until it boils.
  • Taste and adjust seasoning and serve with garlic bread or toast.


TIP:
If the artichokes do not thicken the soup sufficiently, sprinkle in a little sago or semolina when it is returned to the saucepan.
