Carrot Croquettes

Ingredients:

2 cups coked mashed carrots (about 8 large carrots)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
pinch of nutmeg
2 teaspoons butter, softened
3 egg yolks
1 whole egg
bread crumbs
oil for frying


Preparation:

  • Wash and boil carrots until just tender.
  • Drain and mash them and set aside to cool.
  • Stir in spices, butter and egg yolks and mix thoroughly.
  • Cover and put in fridge for at least 2 hours or until cold..
  • Shape cold carrot mixture into tiny croquettes, dip in slightly beaten egg, roll in fine bread crumbs and fry quickly in hot oil.
  • Drain on paper towel and serve with your favorite cream sauce.
