| 1 pint small white mushrooms
1 pint cherry tomatoes, halved
if large
1 clove garlic, chopped
1 medium red onion, sliced
2 teaspoons fresh lemon juice
2 tablespoons fresh parsley,
chopped
1/2 teaspoon dry oregano
2/3 cup Sundried Tomato dressing
ground black pepper to taste |
1. Prepare
vegetables and place them in a large bowl.
2. Add dressing, parsley,
lemon juice, garlic, oregano, and pepper.
3. Toss well, cover and refrigerate
for couple hours before serving.
Makes 5-6 servings.
Serve with garlic bread
for healthy vegetarian meal. |
