Summer Berry Wine Compote

Ingredients:

1½ cups raspberries

1 cup dry white wine

1/2 cup honey

1½ cups blackberries


Preparation:

  • In a food processor mash 1/2 cup raspberries and 1 cup of wine. Add honey and process until smooth. 
  • Transfer to medium size saucepan and bring to boil. Reduce heat and simmer for 1-2 minutes. 
  • Strain mixture through sieve and cool. Add remaining raspberries and blackberries. Toss gently and refrigerate until cold.

NOTE:
You could spoon and serve Summer Berry Wine Compote over ice cream, crepes, pudding, waffles, custard, Ricotta cheese cream or cheese cake. Garnish with lemon balm or mint.
