Carrots in Cream Sauce

Ingredients:

1 package baby carrots
2 tablespoons butter
2 tablespoons flour
1 cup cream
pinch nutmeg
pinch cayenne
pinch ground black pepper
salt to taste


Preparation:

  • Boil carrots in salted water for about 10  to 12 minutes.
  • Remove them from hot water and plunge them in cold water.
  • In a sauce pan melt butter, stir in flour and cook until just golden in color. Add cream and cook for couple minutes.
  • Add all spices and carrots to the sauce, stir and let simmer in the sauce for couple minutes.
  • Taste and adjust seasonings.
  • Serve hot.
TIP: Combination of precooked green peas and carrots in cream sauce make an excellent side dish.
