Muffins are tasty hot breads made from thick batters with variations. This form of hot bread, may be baked in a loaf pan or in individual tins. Use them as additions to meals, or to make change in your weekly menu. They are usually enjoyed by nearly every one.

TIPS: It is an excellent plan to be able to substitute one thing for another in recipes of this kind, and this may be done if the materials are used in correct proportion. For example:
  • If the taste of molasses is undesirable, honey, jam or any other liquid (regular milk, sour milk, yogurt or even fruit juice) may be substituted for it.
  • Any given muffin recipe in which regular milk is used may be made with sour milk or yogurt. If you are using sour milk or yogurt, just keep in mind that you have to use baking soda instead of baking powder.
  • If fresh blueberries are not available, you can use frozen blueberries or any other available fruit you like.

NOTE:
Muffin paper cups are round sheets of paper, foil or metal, with scallop-pressed edges, giving the muffin a round cup shape. Their shape can be compared to that of a disposable coffee filter. Muffin paper cups are used to line the bottoms of muffin pans, used in the baking of muffins to facilitate the easy removal of the finished pastry from the muffin tin.

The advantage to cooks is easier removal and cleanup, more precise form, and moister muffins; however, using them will prevent a crust.
