Stuffed Eggs with Bacon and Cheese

Stuffed Eggs with Bacon and Cheese

Ingredients:

12 hard cooked eggs
8 tablespoons mayonnaise
6 slices crisp bacon
1 tablespoon fresh lemon juice
1/2 cup grated cheddar cheese
1/4 teaspoon onion salt
2 tablespoons chopped fresh chive for garnish, optional


Directions:

1. Peel hard cooked eggs and using a sharp knife halve eggs lengthwise.
2. Scoop yolks into a sieve set over a medium size bowl, then press yolks through the sieve with the back of a spoon.
3. Mix in mayonnaise, lemon juice and salt to taste.
4. Stir in cheddar cheese and half crumbled bacon. Fill egg white halves. Top with reminded crumbled bacon.

Makes 12 servings.
