Appetizers prep is all about assembling and presentation

Three Cheese Parsley Ball

Ingredients:

8 oz. (240 g) cream cheese, room temperature
5 oz. (150 g) cheddar cheese; shredded
5 oz. (150 g) blue cheese, crumbled
1 teaspoon dijon mustard
1 teaspoon Worcestershire Sauce
1/4 teaspoon salt
2 cloves garlic, minced or pressed
1/2 cup pecans, finely chopped
1/2 cup black currants
2/3 cup parsley, finely chopped
Assorted crackers
Apple and pear wedges


Makes 10 to 12 servings.

Directions:

1. In a food processor or mixer bowl mix all ingredients except pecans, parsley and black currants. Beat at low speed until well mixed.
2. Stir in the pecans and currants. Taste and adjust seasoning.
3. Refrigerate the mixture for 25 to 30 minutes or until slightly firm, then shape into a ball.
4. Roll in the chopped parsley to coat well.
5. Cover and refrigerate until ready to serve. Let stand at room temperature for about 20 minutes before serving.
6. Arrange on a platter surrounded with crackers apple and pear wedges.

Tip:

Sprinkle apple and pear wedges with lemon juice to prevent discolorization.

To counter the effects of hypertension (high blood pressure), eat plenty of fresh vegetables, fresh fruits, legumes, low in fat and high-fibre foods. Cut down on: smoked meat, processed meat, canned and processed foods, added salt and fatty foods.
