Iced Mocha Supreme

Coffee can be a treat any time of day. Served chilled with a hint of vanilla, this iced mocha is a refreshing indulgence.

Ingredients:

4 cups freshly brewed double strength coffee
1/4 cup semi-sweet or regular chocolate syrup
1 cup half and half
2 teaspoons vanilla flavored coffee syrup
Whipped cream
Chocolate shavings

Directions:

1. In large pitcher, combine coffee and chocolate syrup. Mix well.
2. Stir in half and half and vanilla syrup. Mix well. Cover and chill 30 minutes or up to 2 hours before serving.
3. To serve, pour chilled mixture into frosted mugs and top with whipped cream and chocolate shavings.

Makes 7 - 8 servings.

NOTE:

To make double strength coffee, use two tablespoons coffee for each cup (6 ounce) brewed.


TIP:

For summer version you could freeze a portion of prepared Iced Mocha Supreme in ice cube trays and serve cubes and coffee combination in tall glasses, instead of frosted mugs. Top with your favorite ice cream or frozen yogurt and sprinkle with chocolate shavings. Serve with a straw and a long-handled spoon.

Originally, coffee farming was done in the shade of trees, which provided a habitat for many animals and insects. This method is commonly referred to as the traditional shaded method or "shade-grown". Many farmers have decided to switch their production method to sun cultivation, a method in which coffee is grown in rows under full sun with little or no forest canopy. This causes berries to ripen more rapidly and bushes to produce higher yields, but requires the clearing of trees and increased use of fertilizer and pesticides, which damage the environment and cause health problems. When compared to the sun cultivation method, traditional coffee production causes berries to ripen more slowly and produce lower yields, but the quality of the coffee is allegedly superior. In addition, the traditional shaded method is environmentally friendly and provides living space for many wildlife species.

Opponents of sun cultivation say environmental problems such as deforestation, pesticide pollution, habitat destruction, and soil and water degradation are the side effects of these practices. The American Birding Association, Smithsonian Migratory Bird Center, Rainforest Alliance, and the Arbor Day Foundation have led a campaign for "shade-grown" and organic coffees, which it says are sustainably harvested. However, while certain types of shaded coffee cultivation systems show greater biodiversity than full-sun systems, they still compare poorly to native forest in terms of habitat value.
