Oat Bran Raisin
Muffins
Ingredients:

cups oat bran
1/4
cup packed brown sugar
2
tsp. baking powder
1/2
cup raisins
1
cup plain low-fat yogurt
1
egg, slightly beaten
1/4
cup milk, 2% M.F. or skim
1/4
cup molasses or liquid honey
2
tbsp. vegetable oil
1
tsp. grated orange rind
Preparation:
- In
large bowl, mix dry ingredients.
- In another bowl,
combine remaining ingredients then add to dry
ingredients.
- Stir until just
dampened.
- Spoon batter into 12
greased or paper-lined muffin cups.
- Bake at 400°F (200°C) 20
min., or until muffins are golden
brown.
Makes 12 muffins.
