Christmas Yeast Rolls

Christmas Yeast Rolls

Christmas and baked goods are synonymous. Enjoy freshly baked, light and fluffy yeast rolls during the holiday season.

Ingredients:

6 cups all-purpose flour
2 packages (1/4 oz. ea) dry yeast
2 large eggs
2 teaspoons salt
2 tablespoons sugar
1/2 cup olive oil, divided (reserve 3 tablespoons for brushing)
2 cups hot water
1/2 cup cold milk
3 to 4 tablespoons of melted butter for greasing baking tins


Directions:

1. In a large mixing bowl, stir 1/2 cup of olive oil in hot water. Add salt and sugar and mix well. Mix in cold milk and add dry yeast; stir well to dissolve yeast.
2. Add half of the flour (3 cups) to the yeast mixture and mix. Beat in eggs and remaining flour and mix well.
3. Cover bowl with plastic wrap or clean cloth and let dough rise in warm location until doubles in size (about 1 hour).
4. Grease 3 baking tins or dishes (9x9-inch) with melted butter and set aside.
5. When dough is ready, uncover and punch it down with greased hands. Make 48 egg-size balls of dough and place 16 in each of greased baking tins or dishes. Cover and let rise until doubled in size (arround 30 minutes).
6. Preheated oven to 325º F (160º C).
7. Bake yeast rolls for about 35 to 40 minutes, or until baked through and pale golden on top and bottom.
8. Brush tops of rolls with olive oil while hot. Serve warm.
