Light Salsa
Ingredients:
3 medium size
tomatoes (cored, seeded and chopped
1/2
cup thinly sliced green onions
1
medium size jalapeno pepper (cored, seeded
and finely chopped)
1
clove garlic (minced)
1
teaspoon chopped fresh cilantro
1
teaspoon olive oil
1/2
teaspoon rice vinegar
salt
and ground black pepper to taste
Preparation:
- Prepare all ingredients.
- In a medium bowl toss tomatoes,
onions, garlic, jalapeno
peppers, oil, vinegar, salt and black pepper until well combined.
- Set aside for 1/2 hour to let
flavors mellow.
- Cover and refrigerate until
serving time.
- Just before serving mix in
chopped cilantro and transfer
to a serving bowl.
- Garnish with parsley leaves or
cilantro sprigs.
- Serve with Wonton
Chips.
